Don Julio Blanco is an unaged tequila produced from 100% Blue Weber agave grown in the Los Altos Highlands of Jalisco at La Primavera distillery (NOM 1449). The Highlands agave plants are harvested after seven to ten years of growth, at which point the piñas are roasted in traditional brick ovens to convert starches to fermentable sugars. After fermentation, the wash is double-distilled in copper pot stills and bottled without ageing to preserve the bright, fresh agave character of the Highlands terroir. The resultant spirit showcases the natural sweetness, floral aromatics, and citrus brightness characteristic of Los Altos agave. Bottled at 38% ABV.

Don Julio is a tequila brand founded in the Los Altos — the Highlands — of Jalisco, Mexico, by Don Julio González, who began farming Blue Weber agave in the region in 1942. González established his own distillery in 1987 in Atotonilco el Alto, producing the first tequila to be bottled in a distinctive short, squat bottle at a price point intended to reflect premium quality. The brand is now produced at La Primavera distillery (NOM 1449) in the Los Altos Highlands, owned by Diageo since 2015. The cooler temperatures and rich red clay soils of the Highlands produce Blue Weber agave that is typically sweeter, more floral, and more aromatic than valley-grown agave, resulting in tequila of greater complexity and fruit expression.
