A big step up, the 2007 Cote Rotie la Mouline boasts serious richness and depth, with a still tight, focused and youthful profile that’s begging for another couple of years in the cellar. Giving up plenty of smoked earth, toast, dried flowers, graphite, chocolate and hints of bacon fat, it’s a masculine version of this cuvee that should start to open up in another 3-4 years, and drink beautifully through 2032.

Vineyard Cultivation

La Mouline sits on Côte-Rôtie's celebrated south-facing slopes, where gneissic and micaceous soils provide distinct terroir character and natural warmth. The southern orientation and moderate gradient concentrate heat and ripeness, yielding Syrah with deeper colour and riper phenolic maturity than cooler north-facing sites. E. Guigal's vineyard age and canopy management in 2007 optimised sugar and colour development. The 2007 growing season was warm and dry, favouring ripe, structured fruit with natural power and depth. This vintage showcased La Mouline's richness and complexity, expressing the south-facing terroir's inherent generosity.

Vinification

La Mouline grapes underwent full destemming before fermentation in temperature-controlled vats with natural yeast inoculation. Extended maceration ensured thorough phenolic extraction and colour development. Guigal employed whole-bunch fermentation elements for specific parcels, adding aromatic complexity and textural finesse. After fermentation, natural malolactic conversion proceeded. The wine then entered its signature 42-month élevage in French oak, where phenolic integration and secondary flavour development shaped complexity and ageability. Careful oak management prevents over-extraction whilst allowing gradual phenolic softening and aromatic refinement throughout the extended maturation period.
