A Smoky Ode to Coastal Whimsy
The Palace of Humbug is Fleurieu Distillery's irreverent take on peated malt, named after a fictional sanctuary for sweet-toothed contrarians. Distilled on the blustery South Australian coast, it combines locally malted barley and Scottish peat influence. Matured in a mix of American oak and tawny casks, this single malt is bottled at 53% ABV without chill-filtration, delivering robust flavour with coastal edge.

The nose opens with a medley of liquorice root, peppermint, toffee and campfire smoke. Beneath lies charred oak and briny driftwood, conjuring sea-sprayed barrels and windswept cliffs. On the palate, expect a dynamic blend of sweet and savoury: burnt sugar, treacle toffee, roasted nuts and leather, all wrapped in a haze of earthy peat and maritime tang.

The finish is long, smoky and gently medicinal, tapering with notes of salted caramel, ash, and peppermint bark.

Final Thought
Fleurieu's Palace of Humbug is playful in name but serious in execution - a richly peated malt that tempers seaside smoke with confectionery charm and coastal gravitas.

Fleurieu 'The Palace of Humbug' is a peated single malt whisky produced at the Fleurieu Distillery in Goolwa, South Australia, from peated malted barley. The peat smoke character is incorporated at the malting stage, imparting phenolic compounds into the barley before mashing, fermentation, and distillation in copper pot stills. The whisky is matured in oak casks on the Goolwa waterfront, where Southern Ocean humidity and salt air influence the maturation — integrating the peat smoke with maritime fruit and coastal spice character. Bottled at 53% ABV, the expression is presented at bottle strength to preserve the full peated and coastal flavour profile.

Provenance

Fleurieu Distillery was established in 2013 by Gareth and Angela Andrews in Goolwa, on the Fleurieu Peninsula of South Australia — on the Goolwa Wharf Precinct, where the Murray River meets the Southern Ocean. The Andrews had previously founded the Steam Exchange Brewery on the same site in 2004, before pivoting to single malt whisky production. The distillery's maritime location — exposed to the salt air and humidity of the Southern Ocean — plays a significant role in the maturation character of Fleurieu's whiskies, which are typically rich, fruit-driven, and influenced by the southern coastal environment.
