Tasting Notes

Glendalough 7 Year Old Single Malt Mizunara Finish
An Irish Pilgrimage Through a Japanese Grove

At its core, this is a classic Irish single malt - triple-distilled, matured for seven years in first-fill American oak, and then finished in Mizunara casks sourced directly from Hokkaido. Mizunara, the notoriously fickle and porous Japanese oak, is revered for the perfume it brings to well-matured spirits - sandalwood, incense, temple wood, and spice. It's not easy to work with. It leaks, it's temperamental - but when used with care, the results can be ethereal.

And that's what we find here: an Irish malt that remains recognisably itself, but transfigured, as if having travelled, meditated, and returned wiser.

The nose is beguiling. Honeyed pear, toasted almond, and heather flowers lead the way, with a soft wave of incense, sandalwood, and baking spice floating underneath. There's a touch of vanilla custard, but it's elevated by something woodsy and aromatic - like walking into a cedar sauna after the rain. The influence of the Mizunara is subtle but unmistakable: refined, lifted, and haunting.

On the palate, it opens with classic Irish sweetness - malted biscuit, apple crumble, and golden syrup - but then blooms into something more exotic: nutmeg, dried mango, and a touch of white pepper. The Mizunara oak brings that signature temple incense note, wrapping the malt's creamy body in dry spice and sandalwood smoke. It's textural too - soft, but structured, like linen over oak.

The finish is long, slightly drying, and contemplative. Notes of vanilla pod, sugar-dusted chestnut, and a faint touch of green tea and coconut husk slowly fade. It doesn't end. It resolves.

Sacred Wood Meets Celtic Grain
There are many Mizunara-finished whiskies on the market today, but few show the wood's character with this kind of restraint and respect. This is not a sweet bomb, nor a wood-forward bruiser. It's a dialogue - between the grassy brightness of Irish malt and the airy depth of Japanese oak.

For lovers of Hakushu, Yamazaki, or Bushmills Causeway finishes, this bottle sits in a similar elevated, thoughtful space - delicate, confident, and full of quiet power.

Final Thought
Glendalough 7 Year Old Mizunara Finish is a whiskey of dual heritage and singular focus. It shows what can happen when two traditions meet, not in competition, but in quiet collaboration.

It's not just a cask finish.
It's a spiritual meeting of wood, place, and patience - from Wicklow to Hokkaido.

Distillation & Provenance

Distillation

Glendalough 7 Year Old Single Malt Irish Whiskey is aged for a minimum of seven years and finished in Japanese Mizunara oak casks. Mizunara (Quercus mongolica) is an exceptionally rare Japanese hardwood that is prized in whisky finishing for its ability to contribute notes of sandalwood, coconut, and incense — aromatics derived from compounds found almost exclusively in Mizunara wood. The casks are highly porous and extremely difficult to cooperage, making Mizunara finishing a logistically demanding and costly undertaking. The Wicklow-distilled Irish single malt takes on these Eastern wood characteristics over the extended finish. Bottled at 46% ABV without chill-filtration.

Provenance

Glendalough Distillery was founded in 2011 by five friends — Kevin Keenan, Gary McLoughlin, Barry Gallagher, Brian Fagan, and Donal O'Gallachoir — in County Wicklow, Ireland, drawing inspiration from the ancient monastic heritage of the Glendalough valley and the wild botanicals of the Wicklow Mountains. Widely regarded as Ireland's first new craft distillery of the modern era, Glendalough produces Irish gin, poitín, and whiskey. The distillery team forages seasonal botanicals from the surrounding countryside and highland lakes, developing a range of spirits that reflect the natural landscape of County Wicklow.
