Vineyard Cultivation

The Meshach range represents Grant Burge's commitment to premium Shiraz from the Barossa Valley's finest vineyard sites. The 2001 vintage drew from mature vines established in deep, free-draining loams and gravelly soils which concentrate flavour and tannin in this warm region. The 2001 growing season saw moderate spring rainfall followed by a warm, dry summer—ideal conditions for deep colour development and phenolic maturity in Shiraz. The vineyard management approach emphasised canopy control and careful ripening management to balance alcohol and extract.

Vinification

Hand-selected fruit was destemmed and crushed before fermentation in large wooden vats using a combination of wild and cultured yeasts. The primary fermentation lasted 10-12 days with regular plunging to extract colour and tannin. Following completion, the wine underwent malolactic fermentation and spent 18 months in French oak barrels of mixed age, allowing gradual oxidative development and oak integration. The finished wine received minimal handling prior to bottling to preserve its structured tannin profile.

Shiraz

Bold and full-bodied, Shiraz delivers rich dark fruit flavours of blackberry, plum, and black cherry, layered with black pepper, clove, and subtle smoke. Firm tannins and a velvety texture give it real structure, often rounded out by notes of chocolate and vanilla from oak ageing. A versatile pairing partner for grilled meats and hearty dishes, it's one of Australia's most planted red varieties

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
