Unlike many fruit-flavoured spirits that rely on concentrates, syrups or artificial flavourings, this release is crafted using 100% fresh fruit to deliver vibrant, natural character in every glass.

Each batch begins with an extraordinary quantity of fresh fruit, which is carefully hand-smoked, torched, macerated, pressed and distilled using traditional techniques. Built on the award-winning Hills & Harbour Gin, the fruit is distilled alongside the spirit rather than simply infused afterwards, creating remarkable depth, freshness and complexity while maintaining the full strength and integrity of the gin.

The process is labour intensive and takes several days to complete, combining time-honoured distillation methods with meticulous craftsmanship. The result is a spirit bursting with authentic fruit flavour, exceptional balance and a purity that can only be achieved through true distillation.
