Kweichow Moutai is a jiang xiang (sauce-aroma) baijiu produced from locally grown red sorghum and wheat in Maotai, Guizhou. Production follows a highly complex, labour-intensive process: the grain undergoes twelve rounds of fermentation in underground pits lined with local stone, and nine separate distillations, producing multiple fractions of spirit that are then blended. The base spirit is aged for a minimum of three years in ceramic vessels before further blending and resting to develop the layered, umami-rich character of the jiang xiang style — notes of soy, dried fruit, leather, flowers, and earthy depth. Bottled at 53% ABV.

Kweichow Moutai is produced in the town of Maotai in Guizhou Province, southwestern China — a location that provides the specific microclimate and water sources considered essential to the spirit's character. The Kweichow Moutai Co., Ltd. is the state-controlled producer of Moutai, which is the most recognised Chinese spirit internationally and a fixture at state banquets and diplomatic occasions in China. The Flying Fairy (Feitian) label is the iconic and most widely distributed Moutai expression, named for the apsara figures from Buddhist cave art at Dunhuang depicted on the label. Moutai is the defining expression of the jiang xiang (sauce-aroma) baijiu style.
