Aged in a selection of first-fill Port and Sherry casks, then finished in Frogmore Creek’s red wine barrels seasoned with Jean Pascal Bakery’s Fruit Mince Pie jus, it’s a celebration of bold flavours and festive indulgence.

GINGERBREAD OLD FASHIONED

60ml LARK Christmas Cask
5ml PX Sherry
3 Barspoons Spiced Ginger Syrup*
1 Dash Bitters

Stir all ingredients on ice. Strain into a rocks glass on a large piece of ice. Express orange peel onto the surface of the cocktail and garnish. Enjoy

*Heat water, caster sugar, grated ginger, cinnamon and allspice together in a pot until combined and richly aromatic.

CHRISTMAS PAVOLVA FIZZ

60ml LARK Christmas Cask
25ml Lemon Juice
10ml Simple Syrup
1 Barspoon Passion fruit Pulp
1/2 Vanilla Pod
1 Egg White
Soda

Lightly muddle the vanilla pod and passion fruit together in a cocktail shaker. Add all other ingredients except soda and whip together for a few minutes. Add ice and briefly shake. Double strain into a tall glass and slowly add enough soda to create a fluffy head to the drink. Garnish with a meringue and enjoy.

Distillation

The Lark Christmas Cask is an annual limited-release Tasmanian single malt whisky produced at Lark Distillery's Hobart waterfront facility, released each year as a festive expression from the distillery's cask reserves. The 2025 release draws on Port and Sherry cask maturation — consistent with Lark's house style of rich, fruit-forward cask influence — to deliver a whisky of warmth and seasonal character. Produced from Tasmanian malted barley, distilled in traditional copper pot stills and matured in carefully selected fortified wine casks. The Christmas Cask is bottled in a limited run without chill-filtration or added colour at 43% ABV, making each annual release a distinct reflection of the distillery's evolving cask stocks.

Provenance

Lark Distillery was founded in 1992 by Bill Lark in Hobart, Tasmania, and is widely credited as the pioneering distillery that launched the modern Australian craft whisky movement. Before Lark, Tasmanian whisky distillation had been suppressed since colonial-era licensing laws. Bill Lark successfully lobbied the Tasmanian government to amend those laws in 1992, opening the path for Tasmania's now-thriving whisky industry. The distillery is located on the Hobart waterfront and draws on Tasmanian barley, local peat from the highlands, and pristine mountain water. The Signature numbered series — Fire Trail, Devil's Storm, and Ruby Abyss — forms the distillery's global travel retail collection.

About this Spirits

Tasmania

Apart from being the most southerly wine region in Australia, Tasmania has among the coolest growing subregions with the potential to make distinctly different wines than in the rest of the country.

Most well known for cool-climate varietals like Pinot noir and Chardonnay (thus sparkling too), Sauvignon Blanc smaller plantings of Riesling, Cabernet and Pinot Gris (more commonly Pinot labelled Pinot Grigio)

Historically, Tasmania can lay claim to being the founder of both the Victorian and South Australian wine industries as William Henty sailed from Launceston to Portland (in Victoria) in 1834 and planted grape cuttings there. Though not conclusively proven, it's believed that John Hack planted vines in South Australia in 1837, closely followed in 1838 by John Reynell.

Warmer vintages (possibly attributable to global warming) has had positive effects on region's industry, allowing grapes in recent vintages to achieve full phenolic ripeness, making for vibrant wines that have been widely accepted as world class.
