Description
Chablis is the motherland of crisp, unoaked and mineral-driven Chard. It's where it was invented. Chablis' chalky soils and cool climate make perfectly crisp, racy, white wine that tastes a little different than Chardonnay from anywhere else in the world, even the rest of Burgundy. One of the long standing "classic" producers of Chablis is the Domaine Louis-Michel. This family owned and operated estate has been producing Chablis for almost 200 years. The Domaine was the first in Chablis to make 100% stainless steel, oak-free wine (they thought it showed the grape and terroir flavors better). Today it is Guillaume Michel who is at the helm, and he farms and makes the wine in much the same way that it was done by his ancestors. Tiny quantities of excellent village Chablis from the masters of all stainless steel Chardonnay. Delicious to drink with seafood, salads and poultry with enough generosity to serve as a classy cocktail white as well. Really good.
