Tasting Notes

Grown on the Roxburgh vineyard in the Upper Hunter Valley, no other varietal represents a sustainable growing future like Vermentino.

Naturally high acid makes a bright, textural delight with tangy citrus flavour and acidity. Plenty of crunch and energy, we hope this wine is still around in the warmer months.

Vineyard Cultivation

Mercer Wines is the Hunter Valley label of Aaron Mercer, widely regarded in Australia for preservative-free winemaking. The Vermentino is grown on the Roxburgh vineyard in the Upper Hunter Valley, a warm inland district where the naturally high-acid, drought-tolerant Mediterranean variety is well suited to a changing climate; Mercer argues no other variety better represents a sustainable growing future in the region. Farming favours vine health and natural acid retention. The 2025 season delivered bright, crunchy fruit; earlier vintages have been praised for vitality and composure, and the house aims for a textural, energetic white with tangy citrus definition rather than overt weight.

Vinification

The wine is made in Mercer's preservative-free style, emphasising clean, careful handling to protect freshness without added sulphur. Vermentino's naturally high acidity underpins a bright, textural palate of tangy citrus, with crunch and energy the stated goals. Fermentation is handled to preserve primary fruit and the variety's characteristic grip and phenolic texture, giving a lively, drink-young white. Specific details for the 2025 - press regime, yeast, any skin contact, vessel and time on lees - are not published, and the preservative-free protocol in particular should be confirmed against the producer's notes for this vintage.

About this Wine

New South Wales

Home to 14 official wine regions, New South Wales offers a diverse and wide ranging expanse to produce wines that appeal to every palate.
From Australia’s oldest continuous wine region – the famous Hunter Valley – to exciting new cool climate regions such as Orange, the Southern Highlands and Tumbarumba, these regions can be found to produce some of the best Australian Wine around. Recognised as the second largest wine producing state in Australia, New South Wales is also the most populous state with its wine consumption far outpacing the region's wine production. Although the Hunter Valley region is well known, the majority of wineries are located along the Murray and Darling Rivers (in the south-east of the state) which supplies water for many of the regions wineries.
Other regions within New South Wales includes the Canberra District, Cowra, Gundagai, Hastings River, Hilltops, Mudgee, New England, Perricoota, Riverina and the Shoalhaven Coast.
