Mezcal Union Uno Joven is produced from a blend of 80% agave espadin and 20% agave cirial — both harvested from San Baltazar Guelavila, Oaxaca, after eight to fourteen years of growth. The harvested piñas are roasted in a conical underground rock oven using Encino (oak) wood and pre-selected river stones for three to five days, then ground using a Chilean tahona stone. The crushed agave fibres and juice are fermented naturally before double distillation in copper alembic stills. The 'Joven' (young) designation indicates the spirit is unaged — bottled directly after distillation to capture the bright, fruit-forward, lightly smoked agave character. 100% artisanal, handmade. Bottled at 46% ABV.
