Michel Couvreur Sour'Hum Single Cask High Esters Rhum 2013 is a single cask rum sourced from a Caribbean distillery producing high-ester distillate in 2013, then matured in a single cask in the Couvreur cellars at Bouze-lès-Beaune, Burgundy. High-ester rums are produced by extending the fermentation period to generate higher concentrations of esters — the aromatic compounds responsible for intense tropical fruit, overripe banana, and funk notes characteristic of Jamaican-style distillates. The Burgundian cellar maturation in a single sherry-seasoned cask integrates these esters and develops depth and complexity. Bottled at natural cask strength, without dilution or filtration. 50.5% ABV.

Provenance

Michel Couvreur was a Belgian entrepreneur who established a spirits maturation operation in Bouze-lès-Beaune, Burgundy, France, primarily working with Scottish malt spirit matured in sherry casks in his rock-carved Burgundian cellars. Alongside the whisky range, the Couvreur house also sources and matures rum under the 'Sour'Hum' label — a name playing on the word 'rhum' — applying the same philosophy of cellar maturation in exceptional casks to Caribbean high-ester rum distillates. The Sour'Hum expression represents the rum dimension of the Couvreur house's exploration of complex, aromatic distillate character. The brand continues under the stewardship of his protégés.
