Noah's Mill is a small-batch Kentucky straight bourbon produced at Willett Distillery in Bardstown, Kentucky, using a mashbill of 72% corn, 13% rye, and 15% malted barley. The bourbon is aged for six to seven years in new charred American oak barrels before a selection of barrels are married together in a small batch and bottled by hand at 57.15% ABV (114.3 proof) — without chill-filtration — delivering the full concentration of caramel, vanilla, toasted oak, dried fruit, and warming spice developed during maturation. Noah's Mill was awarded a Gold Medal at the 2005 San Francisco World Spirits Competition. Bottled at 57.15% ABV in a 750mL format.

Willett Distillery was founded by Thompson Willett on the family farm, with the first batch produced on 17 March 1936. After a period of sourcing whiskey from other Kentucky distilleries, Willett relaunched grain-to-glass in-house production. Noah's Mill is produced entirely in-house at Willett, drawing on the distillery's oldest barrel stocks. It is one of several Kentucky Bourbon Distillers (KBD) small-batch brands, alongside Rowan's Creek and Pure Kentucky XO.
