Critic Scores

2009 Reserve Cabernet Sauvignon presents a deep garnet-purple color and an intense nose of kirsch, warm black currant, mint, chocolate box, cedar and bay leaf. The palate is very full bodied with very firm, chewy tannins and very high acidity. With 16.5% declared alcohol, basically the volume is turned up on everything and it's all a little disjointed at the moment with a long finish that shows the alcohol. I'm hoping this will all knit together with a few years in bottle and then my score will seem conservative, but for now I'm calling it as I see it. Drink it 2012 to 2018+.

-In short, due to weather conditions, the only premium red produced in 2008 was Noon Eclipse (no Reserve Shiraz or Cab produced),- reported Drew Noon. -The 2008 marks a change to the traditional blend of Grenache and Shiraz, to include a little Cabernet and Graciano fruit. We always intended for the Graciano fruit to be included in Noon Eclipse but only after 10 years in the ground do we feel the time is right to begin introducing it to the blend. In 2009 we had the reverse situation, where the old Grenache vines suffered stress and no 2009 Eclipse was produced.- Noon follows biodynamic principals on the winery estate, though does not seek certification. The single estate blocks for the Shiraz and Caberne(more...)

Vinification & Cultivation

Crafted only for our premium wines

Vineyard Cultivation

McLaren Vale in 2009 experienced a warm, dry growing season that concentrated cabernet sauvignon fruit and built deeper colour and tannin structure than earlier vintages. The reserve designation indicates selection from premium vineyard parcels within Noon's McLaren Vale holdings, typically older vines on red soils with slight gravelly subsoils. Cabernet sauvignon benefits from the region's warm days and moderate nights, which allow full phenolic development whilst retaining freshness in the resulting wine. The 2009 vintage saw lower yields as a result of heat, concentrating fruit character further.

Vinification

The 2009 vintage cabernet was hand-harvested and delivered whole-bunch to an open fermentation vessel, where cool pre-fermentation maceration extracted colour and tannin precursors before yeast inoculation. Fermentation proceeded over approximately ten days with twice-daily foot-treading and manual pump-overs, building textural complexity. After pressing, the wine spent twenty-two months in a combination of new French oak (predominantly from Châteauneuf-du-Pape suppliers) and American oak, developing vanilla, cedar and dark-fruit notes. Bottling occurred with minimal fining to preserve tannin structure.

About this Wine

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
