Ideal as an aperitif but also excellent complement to any vegetable-based Mediterranean dish, goat cheese and almonds, raw and oven-baked seafood including tuna, salmon or prawns.

Tasting Notes

Nove is a naturally low-calorie, low-alcohol wine.

A natural maturation process without artificial dealcoholisation results in a wine with ripe aromas and crisp flavours.

Thanks to the Alpine climate of our valleys, the natural sugar level tends to be lower. Some grapes, harvested earlier and in cooler areas, naturally have a lower potential alcohol content.

Lively aromas are favoured by sunny days, acidity is preserved by cool nights and - thanks to the Alpine breeze - the ripening of the grapes accelerates without increasing the sugar level.

The grapes are harvested between the last week of August and the first week of September and immediately destemmed and crushed and then soft-pressed. The must is then placed to ferment together with selected yeasts at a temperature of 16-18°C. At the end of the alcoholic fermentation, the wines are kept in steel vats on the lees and undergo repeated restirring until they are filtered and bottled.

Vineyard Cultivation

Nove is a naturally lower-alcohol Pinot Grigio from Mezzacorona, the long-established grower cooperative based in Trentino in Italy's Dolomites. Pinot Grigio found an ideal home in the Trentino valleys, where the Alpine climate shapes the wine's freshness. Vineyards benefit from sunny days that build lively aromatics and cool nights that preserve acidity, while Alpine breezes accelerate ripening without pushing sugar levels up. Because grapes in these cooler, higher sites carry naturally lower potential alcohol, some parcels are picked a little earlier to hold that balance. This natural approach, rather than artificial dealcoholisation, is central to the base-wine philosophy behind the roughly 9% alcohol, lower-calorie style.

Vinification

As a non-vintage style, Nove is built from grapes harvested between the last week of August and the first week of September, when natural sugars remain moderate. The fruit is destemmed and crushed on arrival, then gently soft-pressed to protect delicacy. The must ferments with selected yeasts at a controlled 16-18 degrees Celsius to retain aromatic freshness. After alcoholic fermentation the wines rest in stainless-steel vats on their fine lees, with repeated lees-stirring to build texture and body, before filtration and bottling. Picking earlier from cooler sites, rather than dealcoholising, keeps alcohol near 9% and calories around 90, giving a crisp, balanced aperitif-style white.
