A clean and crisp acid finish, the wine will develop a nice oily mouthfeel with longer time in bottle. This wine is ageing very nicely and will keep for 4-7 years for optimal drinking potential.

Vineyard Cultivation

Ocean Eight, the Aylward family's Mornington Peninsula winery founded in 2004 at Shoreham, has built a strong reputation for Pinot Gris, and winemaker Mike Aylward has made it a consistent highlight in recent vintages. The fruit is grown on the estate's cool, maritime-influenced vineyards in Victoria's southern Peninsula, where sea breezes and cool nights on red volcanic and clay-loam soils protect natural acidity and slow ripening. Careful farming preserves the delicate aromatics that define the style. The 2024 Peninsula season produced fresh, well-defined fruit, and the wine is lean, bright and tight, balancing fresh citrus intensity with a touch of melon and a hint of ginger.

Vinification

The wine was made in a lean, precise style that favours freshness and fine texture over overt richness on release. Fruit was gently handled and vinified to keep the palate bright and tight, showing fresh citrus intensity with a touch of melon and a hint of ginger, framed by a clean, crisp acid finish. With time in bottle it is expected to develop a rounder, oily mouthfeel, and the wine is built to age gracefully for roughly four to seven years. The emphasis is on balance and definition rather than weight. Victoria

The wine region of Victoria has the highest number of grape vines than any other state in Australia. It is home to over 600 wineries and well known regions such as Yarra valley, Heathcote, and Rutherglen. Victoria is situated in the southeastern corner of Australia where due to the location, the climate has a cool maritime influence and is known for their outstanding Pinot Noir and Chardonnay, along with producing Australia’s most famed dessert Muscat and Topaque wines.

There are a number of different terroir levels throughout the wine region of Victoria which leads to the production of different ranges of wines. In the southern region of Victoria, the vines are regulated by the cool winds of the Bass Strait. Central Victoria consists of mostly flat terrain that tends to be drier and warmer than the rest of Victoria, which results in more fruit concentrated wines. It may be surprising to note that Victoria is the third most productive wine region in Australia, seeing as it does not have as many areas suitable for viticulture, which has resulted in the cellar door culture of Victoria being concentrated with smaller, but more personal boutique wineries.
