The 2020 Penfolds Bin 407 Cabernet Sauvignon is a textbook example of the varietal. It is a blend of grapes from South Australia's Barossa Valley, Coonawarra, and McLaren Vale regions, and it is aged in a combination of French and American oak.
The wine is dark ruby in color with purple reflections. The nose is complex and expressive, with aromas of crème de cassis, blackberries, mulberries, spearmint, toasted cumin, coriander seeds, bay leaf, turmeric, toasted coconut, cedar, and cocoa.
The palate is full-bodied and structured, with flavors of wild black cherries, cola, sarsaparilla, sage leaves fried in nut-brown butter over grilled calves' liver, pistachio terrine, and a fine graphite core. The tannins are seamlessly woven, and the acidity provides a lovely balance.
The wine is surprisingly approachable for its age, but it also has the potential to age beautifully for two to three decades. It is best enjoyed with grilled meats, roasted game, or hearty pasta dishes.
