Phase Three Wines Dero Shiraz 2022 is a rich, expressive South Australian red wine showcasing a contemporary style of one of Australia’s most celebrated varieties. Crafted for character and drinkability, this premium Australian Shiraz reflects the region’s long-standing reputation for generous, full-flavoured wines.

Dark blackberry and plum flavours lead the palate, complemented by lifted pepper, warming spice and smooth, well-integrated tannins. Full of flavour without feeling heavy, Dero Shiraz delivers a balanced, approachable finish and excellent everyday versatility.

Selected from a premium private cellar, this modern South Australian Shiraz is a natural match for grilled steak, roast lamb, burgers, wood-fired pizza and barbecue favourites. Enjoy this crowd-friendly red wine with generous meals or serve it as an inviting addition to relaxed occasions.

Tasted alongside the 2020, this 2021 Dero Shiraz is so different (which reflects the vintages almost diametrically opposed, but the fruit sourcing surely must contribute, too). This is pure and refined, with wild raspberry, cassis and red apple skins, clove, star anise and blackberry pie. Philosophically, this wine feels far more cohesive and compiled than the previous vintage. This is very, very different in expression—the 2020 is savory, earthy and a bit meaty, while this 2021 wine is silken, all flow and line, with poise of tannin. Still, the oak is biscuity as in the 2020 (Bordelais Cooper? Malt-o-milk character), but it is absorbed by the fruit.) Excellent. Yes. Very good.

Lifted and bright aromas of wild raspberries, blackberry bush, dark cherries, licorice, violets and dried herbs. The palate is full-bodied with finely tuned tannins and bright acidity, giving notes of mulberries, bitter chocolate and baking spices. There's a lot to like here, with a nice level of polish and character. Drink or hold.

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
