Plus & Minus is a zero-alcohol range crafted by winemaker Corey Ryan from premium, dry-grown South Australian fruit. This Pinot Grigio is drawn from South Australian vineyards, with the range's fruit associated with dry-grown sites; the label lists it as multi-regional, so it is blended across seasons and districts to a consistent house style rather than a single vintage. Dry-grown, low-yielding fruit is chosen so the base wine carries enough flavour and aromatic intensity to survive alcohol removal. The focus is on ripe pear, apple and citrus character with a floral edge, the varietal freshness of grigio being well suited to a crisp, lower-calorie, alcohol-free white.

The wine is vinified first as a conventional dry Pinot Grigio — cool-fermented in stainless steel to protect its delicate pear, apple and citrus aromatics — before the alcohol is removed to a zero-alcohol level. It is hand-made without artificial sweeteners, with grape seed extract added during processing to raise the naturally occurring antioxidant content. Residual sweetness and acidity are balanced after de-alcoholisation to keep the palate lively rather than hollow, giving a burst of citrus underpinned by gentle sweetness. It is designed to be served well chilled, and finishes clean and dry.
