Tasting Notes

The delicious Fig Gin & Fig Aperitif are made at the Glen Ewin Estate Adelaide Hills (South Australia). 12000 fig trees, 25 years chemical free. The figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. Enjoy on the rocks with a squeeze of lime for a flavour explosion and a perfect balance of sweetness and acidity, follow with a little tonic, (Mediterranean fever tree recommended) or soda to create the perfect drink.

Distillation

Pot & Still South Australian Fig Gin is produced at Glen Ewin Estate in the Adelaide Hills in collaboration with Applewood Distillery, using fresh figs grown on the estate's 12,000 chemical-free trees. The figs are gently poached to extract the sweet fig aroma, essence, and natural earthiness before the resulting extract is combined with a base spirit and traditional gin botanicals to create a fruity, gently spiced gin liqueur at 29% ABV. The entire process — fig growing, harvesting, syrup preparation, blending, and bottling — is conducted by hand. At 29% ABV, the Fig Gin sits in lower-alcohol gin liqueur territory, suited to spritz-style serves and lighter cocktails. Bottled in a 500mL format.

Provenance

Pot & Still is produced at Glen Ewin Estate in the Adelaide Hills, South Australia — a family-owned property with over 175 years of fig farming heritage. The brand was created by Willa Wauchope, whose family has nurtured 12,000 chemical-free fig trees on the estate for more than 25 years under the Willabrand label. Pot & Still originated in 2016 when excess fig syrup from the Willabrand grace fig production was used to develop a fig-infused gin in collaboration with Applewood Distillery in the Adelaide Hills. The resulting product applies the estate's orchard heritage directly to spirits production.
