Auslese grapes undergo gentle pressing to preserve delicate aromatics. Weil employs low-temperature, extended fermentation in temperature-controlled tanks, allowing natural yeasts to work slowly and develop complexity. The 2021, at 375ml format (typical for sweet wines), retains residual sugar balanced by the vintage's acidity and mineral character.
