Säntis Alpstein XIX is produced at Brauerei Locher in Appenzell, Switzerland, using a two-stage maturation process unique to the Säntis Malt range. The spirit is first aged for approximately three years in small 60-100 litre beer casks from the Locher brewery itself — contributing malty, biscuity, hop-influenced character from the residual beer compounds in the wood. The whisky is then transferred to 235-litre sherry casks for a further three years of finishing maturation, during which dried fruit, roasted nut, toffee, vanilla, and dark chocolate notes develop. Edition XIX was bottled at 48% ABV in a limited run of 2,200 hand-labelled bottles of 500mL.

Säntis Malt Swiss Alpine Whisky is produced by Brauerei Locher in Appenzell, north-east Switzerland — a family brewery established in 1886 at the foot of the Alpstein massif.
