      The Hatchling Shiraz is sourced from several blocks within our estate vineyards at Neldner Road and Roennfeldt Road in the Marananga sub region on the western side of the central Barossa Valley. The Shiraz fruit is hand-picked, destemmed and fermented in 5 tonne open top fermenters with twice daily pump-overs to achieve maximum extraction of colour, flavour and tannin. At the completion of fermentation, the wine is drained and basket pressed to seasoned French oak barriques for 15 months before final blending and bottling. Typical of all Schubert Estate red wines, the colours are intense, verging on black with garnet tinges on the edge. The nose is full of lifted dark red fruit aromas intermingled with mulberry, blackberry and plum, full whole black peppercorns and undertones of chocolate and liquorice. The palate is rich and ripe, full of fresh dark and black fruits held together with fine soft tannins culminating in a long and lingering finish. Drink now or cellar through the next decade for future enjoyment.
