Genre: Oak-Sweetened Salt Air - Classic, Clean, and Quietly Joyful

 

This one feels like walking a boardwalk with the sun on your face. A bourbon cask foundation, but filtered through cool Tasmanian air - bright and breezy, but grounded by warmth and grain.

 

It smells like vanilla and citrus peel, but it opens into something broader - a little cream, a little woodsmoke, a lot of calm. There’s no big show here. Just the slow unfolding of a whisky that knows exactly what it is.

 

You taste it, and the world hushes a little. Sweetness, yes. But also grain, and spice, and the faintest kiss of sea spray. It finishes like a good conversation - clean, satisfying, and worth coming back to.

Distillation

Spring Bay Bourbon Cask is a Tasmanian single malt from Spring Bay Distillery's Cambridge facility, matured in ex-bourbon American oak casks. The spirit is produced grain-to-glass in a 2,500-litre copper pot still using Tasmanian malted barley and pristine East Coast rainwater. Bourbon cask maturation imparts vanilla, honey, toasted coconut, and caramel notes derived from the first-fill American oak barrels previously seasoned with Kentucky bourbon, complementing the fruity, floral character typical of the cool Tasmanian maritime climate. Bottled at 46% ABV without chill-filtration, preserving the natural texture of the Tasmanian spirit in the 700mL format.

Provenance

Spring Bay Distillery was founded in 2015 by Cam and Suzy Brett on Tasmania's East Coast — a region known for pristine coastal environments and clean mineral water. The distillery operates across two sites: an original cellar door overlooking Spring Beach on the Tasman Peninsula, and a larger grain-to-glass production facility built in Cambridge, near Hobart, in 2019. Cam and Suzy Brett combined more than 20 years of personal whisky passion with a professional commitment to single malt production. Spring Bay's whisky uses east coast rainwater and a 2,500-litre copper pot still. The distillery has won the Icons of Whisky Awards for Global Visitor Attraction of the Year and Craft Producer of the Year.

About this Spirits

Tasmania

Apart from being the most southerly wine region in Australia, Tasmania has among the coolest growing subregions with the potential to make distinctly different wines than in the rest of the country.

Most well known for cool-climate varietals like Pinot noir and Chardonnay (thus sparkling too), Sauvignon Blanc smaller plantings of Riesling, Cabernet and Pinot Gris (more commonly Pinot labelled Pinot Grigio)

Historically, Tasmania can lay claim to being the founder of both the Victorian and South Australian wine industries as William Henty sailed from Launceston to Portland (in Victoria) in 1834 and planted grape cuttings there. Though not conclusively proven, it's believed that John Hack planted vines in South Australia in 1837, closely followed in 1838 by John Reynell.

Warmer vintages (possibly attributable to global warming) has had positive effects on region's industry, allowing grapes in recent vintages to achieve full phenolic ripeness, making for vibrant wines that have been widely accepted as world class.
