Stellacello Pompelmo is made by macerating whole pink grapefruit peel in a high-proof neutral base spirit for up to two months — a significantly longer maceration than most commercial liqueurs — allowing the aromatic oils and bitter compounds of the grapefruit pith and peel to fully infuse into the spirit. The steeped spirit is then modestly sweetened with sugar syrup and diluted to the finished bottling strength of 29% ABV. The slow maceration process produces a liqueur of notable freshness and aromatic intensity, capturing the bright, bitter-sweet character of pink grapefruit without artificial flavouring. Available in a 500mL format suited to both neat serving as an aperitivo or digestivo and cocktail use.
