Tasting Notes

Imagine the end of the world… and someone still distilling. That's the mood here. This peated expression isn't your Scottish thundercloud - it's smoke off eucalyptus branches, campfires beside iron-red cliffs. In the glass: deep amber, glinting like scorched gold.

The nose is wild - smoked apricot, charred gum wood, old leather, and the hint of ash trailing off into floral bush honey. It's raw, grounded, ancient. The palate delivers layered intensity: sweet cereal malt met by roaring smoke, black tea, dark chocolate, and toasted herbs. The texture is full-bodied but agile - a prowler, not a brawler.

It finishes long and earthy - smoke woven through citrus oil and native spice. If Islay is thunder and sea spray, Lark Peated is lightning above dry forest. Beautifully wild, uniquely Australian.

Distillation

Lark's Tasmanian Peated Single Malt is produced using malted barley peated with Tasmanian highland peat — sourced from the island's boggy moorlands — giving the spirit a distinctive earthy, herbal smoke character that differs from the heavily medicinal peat of Islay Scotch. The peated malt is distilled in traditional copper pot stills at Lark's Hobart waterfront distillery and then matured in Port and Sherry casks, a combination that layers the Tasmanian peat smoke with the rich fruit, chocolate, and spice character of the wood. The balance between peat smoke and fortified wine cask influence is a hallmark of Lark's peated style. Bottled at 46% ABV without chill-filtration.

Provenance

Lark Distillery was founded in 1992 by Bill Lark in Hobart, Tasmania, and is widely credited as the pioneering distillery that launched the modern Australian craft whisky movement. Before Lark, Tasmanian whisky distillation had been suppressed since colonial-era licensing laws. Bill Lark successfully lobbied the Tasmanian government to amend those laws in 1992, opening the path for Tasmania's now-thriving whisky industry. The distillery is located on the Hobart waterfront and draws on Tasmanian barley, local peat from the highlands, and pristine mountain water. The Signature numbered series — Fire Trail, Devil's Storm, and Ruby Abyss — forms the distillery's global travel retail collection.
