Tasting Notes

With a blend of native Spanish grape varieties Xarel lo, Macabeo and Parellada, this Cava showcases a fine balance of fruitiness and elegance.

Aged for 24 months in the bottle after spending 2 years on lees. Bright pale golden yellow. Fine and constant bubbles form a persistent crown. Nose evokes white flowers, ripe stone fruits, and tropical notes with a background of fresh herbs, subtly toasted. In the mouth, it is dry, integrated, and creamy. Good structure balancing with character and excellent integration.

Critic Scores

A refined and complex traditional-method Cava, clearly showing the benefits of extended ageing. Aromas of lemon curd, green apple, toasted brioche and subtle nuttiness rise from the glass. The palate is dry and finely structured, with a persistent, creamy mousse and flavours of citrus, almond meal, graphite-like minerality and gentle autolytic complexity. The finish is long, crisp and savoury, with the balance between freshness and maturity particularly well judged. The Brut Reserva is crafted from the three core indigenous grapes traditionally used in Cava; Xarel·lo, Macabeo and Parellada with Xarel·lo contributing structure and depth, Macabeo freshness and lift, and Parellada finesse and precision. Composed, complex and beautifully balanced.

Cava is a much underappreciated style of sparkler, especially in this country. A blend of Xarel lo, Macabeo and Parellada, this thoroughly enjoyable fizz spends four years on lees and then another couple in the bottle before release.

The colour is a gleaming yellow. Well structured, this is quite tight with notes of jasmine, stonefruits, figs, peaches and a real peppermint touch. There are also hints of tropicals. An attractive style which is clean and refreshing, with bright acidity and showing us medium length. This will please a lot of people over the next three to four years.

The Spanish Cava is a rather appealing alternative to traditional sparkling wines from France and Australia. It’s made in the traditional way and has a deep and penetrating intensity, a mix of light toffee, and hazelnut with a creamy honeysuckle overlay. It’s crisp with a fine acidity sustaining the long palate. Great with food of substance.

Vineyard Cultivation

Tres Naus is a cava produced by Cellers Domenys at its 1918 Art Nouveau winery, designed by Cesar Martinell, at Rocafort de Queralt in the Conca de Barbera of inland Catalonia, sited at around 566 metres altitude. Under the Cava DO, the wine is built from the native white varieties Macabeu, Xarel-lo and Parellada grown in these high, continental vineyards, where elevation and cold nights hold acidity through ripening. The calcareous soils of the Conca de Barbera lend the base wines a lean, mineral profile made for bottle ageing. The 2018 season in Catalonia was cooler and wetter than the preceding year, giving fresher, more aromatic base wines after a return to more generous yields.

Vinification

The three white varieties were pressed and vinified as a still base wine, then tiraged and taken through their second fermentation in bottle in the traditional method. Aged on lees as a Reserva for around twenty-four months, the wine developed toast, pastry and dried-apple autolytic notes over its fresh citrus and orchard fruit. Following riddling and disgorgement it was finished in a Brut style, its firm high-altitude acidity balanced by a measured dosage. The exact dosage for this bottling is not published by the producer.
