Vineyard Cultivation

Villabella's Ripasso represents the second-tier Valpolicella category, wherein finished wine is re-macerated on the dried skins leftover from Amarone production—a technique that imparts additional colour, tannin, and complexity without reaching Amarone's concentration. The base wine derives from Corvina, Rondinella, and other Valpolicella varieties grown on the estate's hillside parcels. After the initial harvest and fermentation, the wine contacts Amarone pomace (spent skins), absorbing deeper colour and phenolic structure. The 2020 vintage brought moderate warmth and adequate rainfall, yielding balanced fruit—neither overly concentrated nor deficient in ripeness—ideal for Ripasso's middle-ground profile.

Vinification

Initial fermentation of fresh-harvested grapes proceeded with indigenous yeasts in stainless steel or neutral wood, yielding a wine of moderate body and alcohol (typically 13–13.5%). This finished wine then underwent secondary contact with appassimento pomace from Amarone production, a re-maceration lasting one to three weeks depending on desired extraction. This step imparted additional tannin, colour, and dried-fruit character. The wine then aged in large oak casks for typically one to two years, softening tannins whilst the secondary flavours integrated. Bottling occurred after this maturation, with minimal fining and no filtration.

Veneto

Veneto in the north east of Italy, is the 8th largest region in Italy in terms of land mass, and over 90,000 hectares are under vine, of which some 35,000 hectares are DOC, making Veneto the largest producer of DOC wines in Italy. Venetian viticulture dates back to the Roman times, but phylloxera and world wars saw large cooperatives come to the region taking over many smaller vineyards.

The region is protected from the harsh European climate by the Alps, in the north of Veneto, though the cool climate there is ideal for producing Garganega, the main variety in the white wine Soave. To the east, along the Adriatic coast the renowned Valpolicella, Amarone and Bardolino DOC reds are produced. Reds are often blended with multiple grapes although straight varietals like Cabernet Franc can be very enjoyable.

The plains of Piave produce vast quantities of wine, rather than necessarily producing the highest quality wines and up in the Conegliano hills to the north is home to the Prosecco variety, which is growing in popularity, seen as a bargain alternative to Champagne.
