In the experimental spirit of the Pacific Northwest, Westward’s Single Barrel Sourdough release showcases the distillery’s dedication to both regional flavour and fermentation innovation. Rather than defaulting to commercial strains, this whiskey is fermented using wild sourdough yeast cultivated in-house by Westward’s team - a nod to Portland’s famed artisan bread culture and its shared roots with craft brewing.

Starting with a mash of 100 percent malted barley, the whiskey undergoes ale-style fermentation before being double pot-distilled and matured in new American oak casks. Each barrel in this series is hand-selected for its expressive, fermentation-forward character - a rare profile even within the world of American single malt.

The nose is singular and unmistakable - toasted sourdough crust, sour cherry, beeswax and orange marmalade, framed by soft vanilla and a dry oak backbone. There’s an aromatic tang that signals wild fermentation, offering a bridge between grain, yeast and wood.

The palate opens broad and savoury. Stone fruit, brown butter, lemon zest and honeyed grain play across a creamy mouthfeel. The sourdough yeast imparts a gentle funk and earthy warmth, while malt sweetness and oak spice - clove, cinnamon stick, roasted hazelnut - build in elegant layers.

Westward Single Barrel Sourdough is an American single malt whiskey produced from a wash fermented using a genuine sourdough culture — developed in collaboration with Ken Forkish of Ken's Artisan Bakery in Portland, one of the United States' most acclaimed bakers. Rather than a standard distiller's yeast, the sourdough starter introduces wild and cultivated yeasts and lactobacillus bacteria that create a fermentation of greater complexity — producing a wash with naturally developed acidity, depth, and character before distillation. The resulting single malt is matured in a single new American oak barrel and bottled as a single barrel release at 45% ABV, expressing the distinct influence of the sourdough fermentation in a whiskey of unusual texture, breadiness, and layered fruit.

Provenance

Westward Whiskey is an American single malt distillery in Portland, Oregon, founded in 2004 by Christian Krogstad and Lee Medoff as House Spirits Distillery. Westward was launched as the distillery's whiskey programme in 2012, positioned at the vanguard of the American craft distilling movement with a distinctly Pacific Northwest identity — one built on the intersection of Oregon's craft brewing and distilling cultures. The distillery, now the largest in the Pacific Northwest, opened its current Portland home on Distillery Row in late 2015. Westward produces American single malt using Pacific Northwest two-row barley, fermented with craft ale yeast — a practice drawn from the craft brewing heritage of Portland that distinguishes its spirit from Scotch-tradition single malt.
