Tasting Notes

Yatsu Boshi Gin
Clean, crisp, and quietly captivating - a Japanese gin that balances precision with poetic flair.

Yatsu Boshi Gin may not shout, but it speaks volumes. Distilled in Japan and named after the "eight-pointed star" - a symbol of guidance and harmony - this gin reflects everything we love about Japanese craftsmanship: attention to detail, reverence for ingredients, and balance in every sip. It's not just a gin; it's a meditation in botanical form.

The flavour profile leans towards the elegant and refined. Juniper is present, but never dominant - more a supporting note than a lead. Instead, you'll find a delicate bouquet of Japanese citrus, soft florals, and gently earthy undertones. On the nose, expect yuzu and sudachi peel dancing with a hint of green tea and mountain herbs. The palate is light yet layered, opening with bright citrus, followed by subtle spice and a whisper of sakura blossom. There's a smoothness here that's almost silky, with a clean, dry finish that fades like a memory.

Yatsu Boshi is a gin that rewards minimalism. It's ideal in a crisp Gin & Tonic with a splash of yuzu soda or light tonic, garnished simply with a twist of lemon or shiso leaf. It makes a serene Martini - bone dry with a citrus twist - and works beautifully in highball-style drinks with soda, ice, and nothing more. It's also a gentle hero in cocktails like a White Lady or a French 75, where its subtle aromatics can truly shine.

What sets Yatsu Boshi apart is its restraint. There's no gimmickry, no overpowering flavours, just a pure and thoughtful expression of Japanese botanical culture. It's a gin that feels intentional - from the glass design to the final sip - and offers a refreshing change of pace for those who appreciate elegance over intensity.

For fans of Ki No Bi, Roku, or even lighter New Western styles, Yatsu Boshi is a quiet revelation. Delicate, thoughtful, and beautifully composed - it's gin with grace.

Distillation & Provenance

Crafted only for our premium spirits

Distillation

Yatsu Boshi Gin is distilled using shochu production techniques — adapted from Yatsushiro Distillery's decades of shochu-making expertise — to maximise the aromatic expression of three rare Kumamoto citrus varieties: Aoyuzu (green yuzu), Shiranui (a mandarin variety known as Dekopon), and Banpeiyu (a large, fragrant pomelo found almost nowhere outside Japan). By limiting the botanical selection to these three precious regional citrus fruits, the distillery concentrates and distils the essence of each variety with precision. The result is a Japanese gin of clean, intensely aromatic citrus character — fresh, floral, and distinct from European-style gins. Bottled at 43% ABV in a 700mL format.

Provenance

Yatsu Boshi Gin is produced at Yatsushiro Distillery in Kumamoto Prefecture on the island of Kyushu in southern Japan. The distillery was established in 1939 and has been producing shochu — the traditional Japanese distilled spirit — since 1963. Yatsu Boshi was launched in 2023 as the distillery's craft gin, produced by Kirin Mercian, the spirits division of the Kirin Group. The gin was developed by applying the distillery's deep knowledge of shochu distillation to a new gin concept centred entirely on the precious citrus fruits of Kumamoto Prefecture — a region renowned for its exceptional yuzu, Shiranui (Dekopon), and Banpeiyu pomelo production. The gin has since been exported to Australia, Singapore, Malaysia, South Korea, the United States, and Thailand.
