Vinification & Cultivation

Crafted only for our premium wines

Vineyard Cultivation

Zero Hour is a non-alcoholic sparkling brand produced by Joval Wines, an Australian family wine company, with the product listed to New South Wales. The wine begins as genuine Australian prosecco-style sparkling before its alcohol is removed, so the growing story is that of the glera-based base wine sourced from Australian vineyards. As a non-vintage, de-alcoholised product it is assembled for a consistent house style rather than reflecting a single season, drawing on fruit picked at moderate ripeness to keep the fresh pear and citrus profile intact. The specific vineyard sources and region within Australia for the base wine are not disclosed by the producer. NEEDS VERIFICATION.

Vinification

The base is made exactly like a conventional prosecco-style sparkling, with fermentation and a tank-based second fermentation to build the bubble, before the finished wine is passed through de-alcoholisation technology that gently removes the alcohol to below 0.5% while aiming to retain aromatics. The result is bottled as a light, bubbly non-alcoholic sparkling showing pear, citrus zest and a touch of honey. The precise de-alcoholisation method used, whether spinning cone or vacuum distillation, is not published, and the base grape is described only as prosecco-style. NEEDS VERIFICATION.
