Tasting Notes

In charge of his family’s domaine since 1980, Foillard is a follower of the teachings of the great Jules Chauvet, the father of France’s natural wine movement. He tends his ancient vines organically, makes and ages his wines traditionally and doesn’t chaptalize, filter or add sulfur to them.

The results are the most transparent renderings of Morgon imaginable, creating a very clear hierarchy within Jean’s array. The increasing depth, intensity and nuance as one progresses through Foillard’s range is as strikingly apparent as the terroir and vintage expression— the qualities for which he is so revered—of each wine.

From the textbook perfume and silky texture of the Classique, through the great complexity and structure of Côte du Py and ending with the stunning elegance and equilibrium of Cuvée 3.14, the differences are startlingly clear.

Critic Scores

5
Foillard’s 2009 Morgon Cuvee 3.14 is drinking beautifully at age 12, wafting from the glass with a rich bouquet of mulberries and blackberries framed by hints of sweet spices, orange rind and violet. On the palate, it’s full-bodied, broad and enveloping, with a textural attack and a rich, concentrated core of fruit built around ripe, powdery tannins and succulent acids. This has already thrown a substantial deposit, but it’s still saturated in hue and an adolescent in terms of structure.

Deep ruby. Heady, expansive aromas of dark berry compote, incense and potpourri, with a strong mineral component and a hint of licorice. Strikingly concentrated yet lithe, offering sweet blackberry and cherry flavors that turn spicier with air. The floral quality repeats on the finish, which refuses to let up. This wine should repay at least another decade of patience and likely much more than that.

The 2009 Morgon Cuvee 3’14” comes from vines older than 90 years. It has a divine and extraordinarily pure bouquet of dark cherries, maraschino cherry, jasmine tea and limestone that is extremely well-defined. The palate is extremely well-balanced with a 'killer' line of acidity. There is impressive weight in the mouth with a bit of sinew toward the finish, although overall, perhaps the 2010 has slightly more finesse and precision. Still, this is a beautiful Morgon.

Vinification & Cultivation

Vineyard Cultivation

Foillard's vineyard parcels in Morgon occupy ancient volcanic soils derived from porphyry and granite bedrock, with clay-rich subsoils on south and southeast-facing slopes between 400 and 500 metres elevation. The house has farmed organically since the 1990s, practising natural vinification with minimal external inputs and respecting indigenous microbial populations. Morgon's 2009 vintage saw warm, dry summer conditions following a cool spring, extending the growing season and deepening phenolic maturity in Gamay berries. Yields were kept moderate through careful cluster thinning, concentrating fruit flavours and tannin development.

Vinification

Foillard employs semi-carbonic maceration for Cuvée 3.14, retaining whole bunches to amplify aromatic complexity and preserve delicate fruit-derived tannins. A period of whole-grape fermentation precedes traditional foot-treading and gravitational transfer without mechanical intervention or enzyme additions. The wine rests in neutral concrete or glass vessels to preserve varietal expression; minimal sulphur additions at bottling underscore the house's low-intervention philosophy. Long maceration, typically three to four weeks, gradually builds tannic structure and colour whilst avoiding extractive oak influence or oxidative character.
