Mount Horrocks is a Clare Valley estate owned and run by winemaker Stephanie Toole, whose meticulous viticulture and winemaking have made the Watervale Riesling one of the region's reference points. The wine is a single-region expression from estate vineyards in the Watervale sub-region at the southern end of the Clare Valley, on limestone-influenced soils that lend Riesling its citrus intensity, chalky texture and mineral drive. The 2025 season delivered fruit of notable intensity and juiciness, translated by Toole into a Riesling combining vibrancy with a chisel-cut chalkiness of texture. As ever, careful, low-yield farming and attention to detail in the vineyard underpin the wine's freshness, purity and cellaring potential.

Fruit was picked to retain natural acidity, gently handled and cool-fermented in stainless steel, made dry and without oak so that site and variety speak clearly. The winemaking is deliberately minimal, relying on fruit concentration, talcy phenolic texture and a driving acid line rather than any additive character. The 2025 shows straight-up lime with saline minerality, a crunch of green apple, feijoa and pink grapefruit, rose petal and fine, talcy phenolics, finishing clean and briny. Bottled under screwcap at 12.6 percent alcohol, it balances high drinkability with the structure to reward time in the cellar.
