National Cellar 1573 is a nong xiang (strong-aroma) style baijiu produced by Luzhou Laojiao in Sichuan using the 1573 National Treasure Fermentation Cellars — the oldest intact mud-pit fermentation vessels in Chinese distilling history. Production follows traditional methods: sorghum and wheat are fermented in the historic mud-pit cellars using Luzhou Laojiao's proprietary qu (starter culture), then distilled in traditional zengdi stills. The long-established microbial culture of the 1573 cellars is considered inseparable from the character of the spirit — a soft, mellow, elegant nong xiang profile with fresh floral and fruity notes of white peach and pineapple. Bottled at 52% ABV.
